What's For Dinner? Mexican Chicken!

Hello,

If you are in a quandary as to what to serve for dinner tonight, or what to take to the next church pot luck dinner, here is a recipe you will love. Mexican chicken is pretty easy to make, and only requires a few ingredients.

What you will need:

1.5 lbs of Chicken

1 package of Taco Seasoning

1 family size Cream of Mushroom Soup

2 cans of Rotel (or Tomatoes if you don’t like spicy food)

1 bag of Tortilla Chips

1 large bag of Shredded Cheese

This will make two good size baking dishes.

How To Make It:

Boil the Chicken in water, with the Taco Seasoning added.

After Chicken is cooked, remove it from the water and set it on a platter. Drain the water but save the pan. Using two forks, shred the Chicken, and put it back into the empty pan.

Next, take the Rotel/Tomatoes and Mushroom Soup, and add them to the chicken. Stir the mixture well, and then let simmer till it begins to boil.

Then take the Shredded Cheese and Tortilla Chips and Chicken mixture, and layer them in your baking dish. Start with a layer of Chips, then the Chicken mixture, then the Cheese. Do this twice to fill up the dish.

Bake in a 400* oven for 35-40 minutes, or until the Cheese is melted. Enjoy!
